Fuji Bakery - Seattle, Washington


The best bakery I've been to in Seattle. And I almost skipped it due to a terrible rain storm, even for a native Portlandian like myself to deal with. It was the last stop on our trip, and was completely worth it! 


It's a very small shop near the train station in Seattle, with only four seats that I could count and just two large pastry cases to order from. They pride themselves in being a truly Japanese bakery and it shows in the beauty of the pastries. They also all looked incredibly fresh and some used interesting ingredients.



The fraise in the case was very beautiful... I dropped this one but did my best to repair it for this photo!



The first pastry we got was a Fraise that had a flaky pastry base topped with organic custard cream, sliced fresh strawberries, and Kirsch. The pastry was very flaky and good, and the strawberries were amazingly fresh and flavorful.

Griottine and Salmon Brioche
Yes that's smoked salmon inside!

Next was a Griottine that also had a pastry shell filled with home made fruit syrup, custard cream, fresh cherries and powdered sugar on top. It was really similar to the Fraise, and was also very tasty. The third pasty was an incredibly fluffy brioche filled with smoked salmon. I think the brioche was the best pasty we ordered. The salmon was delicious but didn't overpower the pastry. 

Fuji Bakery is a must-visit destination in Seattle from now on!
